Red Velvet Cookies made with a cake mix?
I know what you are thinking. Is this cheating? Ummm, NO. You see, a boxed cake mix is for cake. The dry ingredients in a boxed cake mix can be modified to make lots of stuff. If you think calling a boxed cake mix home made is blasphemy then I have to disagree with you. Unless you grew the wheat and milled the flour, any dry good you use for “scratch” recipes is NOT home made. Just a little food for thought.
Anyway, these cookies are AMAZING! Crunchy on the outside, creamy goodness on the inside. The confectioners sugar is just the right touch of sweet to add to the deep red velvet flavor. So, step INTO the box and try these wonderful easy Red Velvet cookies!
8 oz cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
1 box red velvet cake mix
1/2 cup confectioners or powdered sugar
Preheat the oven to 350 degrees. Cream butter and cream cheese together until light and fluffy. Add in egg and vanilla and mix well. Add in Red Velvet cake mix in small batches and mix well until all incorporated. Scoop out tablespoon size amounts of dough and shape into small balls. Roll Balls in confectioners sugar to coat. Bake at 350 degrees for 12-13 minutes. Cool on wire rack and sprinkle with a little more confectioners sugar. Yield: about 3 dozen cookies.
