We have really been trying to eat healthier. I love salads for sure but you know, there are really only so many ways to make them and make them healthy. I try to sit down once a week and plan our meals so we eat somewhat healthy 60% of the time. I also try to invest some time on Sundays after lunch to devote to recipe inspiration by jotting down food that I love to eat. While researching recipes and flavor profiles, I jotted down quite a few Italian dishes that I love. I’ve been hoarding an antipasto recipe for years that I have never made. I have been craving salami and pepperoni for days now. So instead of getting a heavy Italian meal or a pizza(which I love) I decided to throw together a salad. I took a little inspiration from that antipasto recipe and added some cheese tortellini to my salad greens. Not the healthiest of options but as I always say, life is all about that balance. Right?

So in doing all of the prep for this it was like the salad was a base for all of the ideas I had rambling around in my head. I chopped the meats and lettuce and tomatoes and just started pulling out what I had in the fridge. A kitchen sink salad of sorts, Italian style! Here is what I landed on.

  1. 3 cups green leaf lettuce

  2. 1 cup of cherry tomatoes, halved

  3. 1/2 cup chopped pepperoni

  4. 1/2 cup chopped hard salami

  5. 1/4 cup chopped red onion(of course!)

  6. 1 pound package frozen cheese tortellini, cooked to package directions

  7. 1/4 cup shaved parmesan cheese

  8. 1/4 cup mozzarella cheese

  9. 2 tablespoons chopped basil

Cook pasta according to package directions. Drain and cool. Chop all veggies and meats. Combine in a large bowl with pasta and toss. This dressing is a great one to use that is light and very tasty. You don’t need much because the salami and pepperoni have so much flavor.

  • 2 tablespoons white wine vinegar

  • 1 tablespoon lemon juice

  • 1 tablespoon chopped garlic

  • salt and pepper to taste

  • 1/2 cup olive oil

Mix all ingredients well for dressing and pour over salad and toss until all is covered.

Fresh, Filling and Oh, So Good!

So now my cravings were satisfied. And in a smidge healthier way than if I had eaten pizza. I think that is a win! So, try this salad on for size. It is the kind of salad that will leave you full as a tick and satisfied like no other salad can do. Even Big D likes it!

Ingredients
  • 3 cups chopped Green Leaf Lettuce
  • 1 cup halved Cherry tomatoes
  • 1/2 cup chopped Pepperoni
  • 1/2 cup chopped Hard Salami
  • 1/4 cup chopped Red Onion
  • 1 pound package frozen Cheese Tortellini
  • 1/4 cup Parmesan Cheese
  • 1/4 cup Mozzarella Cheese
  • 2 tbsp chopped Basil
  • 2 tbsp White Wine Vinegar
  • 1 tbsp Lemon juice
  • 1 tbsp chopped Garlic
  • 1/2 cup Olive Oil
  • Salt & Pepper To Taste
Instructions
Cook pasta according to package directions. Drain and cool. Chop all veggies and meats. Combine in a large bowl with pasta and toss. Mix vinegar, salt, pepper, garlic, Lemon juice and garlic. Drizzle in olive oil and whisk or shake in a jar to combine. Pour over salad and toss until all is covered. Garnish with more shaved Parmesan and parsley and Enjoy!
