I am all about all things Fall right now. Hankering for cooler temps, carnivals and snuggling. It's still in the 90's here but that doesn't mean a girl can't dream, right?

Apples are in season!

Yes, they are. This time of year until Christmas, you can get the freshest, best tasting apples of the season. Now, I know you can get them all year long but I promise, the apples that are abundant at Farmers markets right now, are fresh and in season. If you don't think there is a difference, I challenge you to test it for yourself. 

Baked Apples, the Easy Way.

Now, I love a whole baked apple, slow cooked in the oven with a dollop of vanilla ice cream but sometimes it's just too hard to wait. So here is an easy recipe to have a cheater of sorts right in your Instant Pot.

Ingredients

  • 3 apples, Peeled, cored and sliced

  • 1 tablespoon Raw Organic Honey

  • 1 tablespoon Maple Syrup

  • 1 healthy teaspoon Cinnamon

  • 1 healthy teaspoon Nutmeg

  • 3-5 tablepoons Water

Peel and core your apples. I use a handy dandy apple corer that both cores and slices.  For this recipe, I still slice my apples slightly thinner than the corer tool does so they will cook down quick. Add the apples, cinnamon, nutmeg, honey, maple syrup and water to the IP and stir well to coat all of the apples. Set to manual or pressure cook for 4 minutes. When it beeps, turn it off and QR(quick release). Stir and use whatever way your heart desires.

Easy, Easy Easy.

Now that was fast! These are good right by themselves with a little ice cream. Three apples makes enough to make a small tarte or pie or just to have for a simple weeknight supper dessert. You can double this recipe for more and store in an airtight container in the fridge. This is also good pureed for applesauce to be eaten or use as a sugar substitute in cakes and baking. However you slice it, these Baked Apples in the Instant Pot are so quick and easy you will keep them on hand all of the time. Enjoy!
