Pinkie Strawberry Brownies

October is Breast Cancer Awareness month and as a woman, I encourage all women to keep an eye on those puppies! Regular breast exams and mammograms when you are over 40, could save your life. In honor of the many strong women in my life who have beaten this disease, I decided to share this easy recipe for Pinkie Strawberry Brownies.

Pinkies are so sweet and delicious. On top of that, they are the ultimate cheater recipe. I am a huge proponent of scratch made cooking but Lawd y’all, I just don’t think these could be any better. Using a prepackaged strawberry cake mix makes these extra easy and delicious. You can also add pureed fresh strawberries for added flavor and flecks of dark pink. I like to put the puree in the cake mix, it makes them even prettier. So here is what you will need.

Ingredients

  • 1 box strawberry cake mix

  • 2 large eggs

  • 1/3 cup vegetable or canola oil

  • pinch of salt

    For the Glaze:

  • 1 cup confectioners sugar

  • 2-4 tbsp milk

Method

Mix the cake mix, eggs and oil and salt in a large bowl. Mix well and make sure to get all the clumps out without over mixing. Spread mixture into a parchment or wax paper lined 8 x 11 or 9x9 baking pan. Using the parchment makes for easy removal from the pan after its cooled. Bake at 350 degrees for 15-20 minutes until a toothpick comes out clean.

While the Pinkies are cooking, Mix confectioners sugar and milk, one tablespoon at a time until glaze is smooth and sort of thick. I actually end up using about 3 tbsp to get it the consistency I like. Here is where you find your own preference for the thickness of the glaze.

While the Pinkies are still hot, spread the glaze evenly on top and allow Pinkies to cool and the glaze to harden. Remove by parchment from pan and cut into squares.
