Stuffed Chicken Roll Ups for the Saturday Win!

As we talked about last week, Saturdays in the South are a big deal. Since we are highlighting tailgate recipes, this one has to be #1. These chicken roll ups make a great hand held food that can classify as an appetizer or the main course. Stuffed with fresh tomatoes, peppers and onions, you get a fresh pop in every bite. Cheese creates a silky finish along with the smoky sweet goodness of a honey balsamic glaze.

Serve these at your next tailgate and you will be the hit of the crowd. A quick sear in a pan creates a crunchy outer layer while finishing them in the oven makes for an easy cook in less than an hour. You will have time to pack the cooler and paint your face with your favorite team colors!

Here is what you will need.

  • 3 large chicken breasts, butterflied, split and pounded out thin

  • 2 Roma Tomatoes

  • 1/4 cup red onion

  • 1/8 cup chopped green pepper

  • 2/3 cup mozzarella cheese

  • 2 tbsp fresh basil, cut into ribbons

  • 2 tbsp olive oil

  • 1/4 cup balsamic vinegar

  • 1/4 cup chicken broth

  • 2 tbsp honey

  • 2 tbsp chopped garlic

  • 2 tbsp Italian seasoning

  • salt and pepper to taste

The Play by Play

Split or butterfly each chicken breast into 2 pieces, fairly thin. Place in a zip top bag and gently pound down and out to flatten. Prep and mix tomatoes, onion, peppers and mozzarella cheese. Season chicken with salt and pepper on both sides and place a spoonful of vegetable mixture on largest part of breast. Carefully roll up and secure with one or two toothpicks. Place roll ups in an oven safe/stovetop pan, like this ONE, that has the heated olive oil in it. Brown on all sides just to sear. Sprinkle remaining vegetable mixture on top. Meanwhile, mix balsamic, broth, honey, garlic and Italian seasoning in a small boiler. Cook for a few minutes to combine. Pour mixture over seared roll ups. Place in a preheated 350 degree oven for 20 minutes. Baste half way through cooking time. Remove from oven and turn chicken over. Cook for an additional 15-20 minutes until done.
